Weekend farmers market haul! any tips?

just got home from the weekend farmers market and my bag is HEAVY 🍅🌽 scored super sweet corn and tomatoes for cheap. any fave easy recipes to use these up? also thinking of trying a new hiking trail next month, so drop your must-bring snacks too!
